My desire for tofu knows no bounds

I have rediscovered my love of tofu and have discovered it rooted even deeper inside of me than I had initially imagined.

In my culinary imagination, tofu looms large with its delicious creamy-beany softness. Now that I'm dairy free, perhaps I'll be able to fill the cheese sized gap in my life with bean curd... especially since it's kind of gloopy and fits any gap so neatly. Cheesecake sized gaps, cream cheese sized gaps, mayonnaise sized gaps.

I watched the Bean Curd Battle episode of the Iron Chef and the Iron Chef Chinese, Chen Kenichi, made the most delicious looking platter of spicy bean curdiness - ma po tofu.

My plan is to serenade Andy and Kate with my own personal theme ingredient until they love tofu as much as I do.

How much tofu is too much tofu? Really, it's a very serious question. First of all there's the issue of all the progestrogen in soy - good for post-menopausal women, but not for women who are ruled by mood swings and hormones. Also, there's some suggestions that soy products tend to absorb chemicals that occur in the environments around which it's grown. Finally, as my mother used to tell me, eating too much of one particular foodstuff can cause morphism. And I don't want to be a soybean.
